Queso Blanco

A very fresh, very mild cow's milk cheese

Date finished: 1/5/14 (ready immediately, should eat within a week)

 

I've made this one before, with one minor difference. Previously I used lemon juice to start the curd formation; this time I used apple cider vinegar. I didn't notice any difference in how the cheese formed.

Mainly, I made this one because we were impatiently waiting for the first cheese to be ready, and wanted instant gratification. Yum! Good cold, better heated up. Delicious baked into naan with fruits & nuts & a little brown sugar...
